Jerk Chicken Made Easy

4 lbs Chicken
4 Tbsp Jerk Dry Rub
4 oz Jerk Sauce

Instructions

Thoroughly coat and rub Jerk Dry Rub on Chicken in mixing bowl.
Add Jerk Sauce to chicken in mixing bowl and rub Jerk Sauce into coated chicken.
Place chicken in freezer bag or covered dish and refrigerate for at least 4 hours.
Preheat Oven /Grill to 325°F and cook chicken until done or internal temperature is 165°F.
Remove Chicken from oven/grill. Let chicken rest for 5 minutes before eating.

Clean and pat dry chicken before coating.

Simple Fried Chicken

4 lbs Chicken
4 Tbsp Seasoning Salt
1 ½ Cup Chicken Breader

Instructions

Thoroughly coat and rub Seasoning Salt on Chicken in mixing bowl.
Add Chicken Breader in freezer bag/plastic shopping bag.
Preheat oil in pan or deep fryer to 350° F.
Place Chicken in bag with breader and shake until chicken is fully coated.
Slowly place chicken into hot oil and cook until done.
Remove chicken from oil and place chicken in a pan lined with paper towels. Let chicken rest for 5 minutes before eating.

Shrimp and Grits Sauce

1 lb Shrimp
1 Pack Turkey Sausage Kielbasa (Cut into Small Cubes)
2 Cups Heavy Cream
2 Tbsp Seafood Spice
1 Tbsp Olive Oil/Cooking Oil to coat the bottom of Skillet
1 Cup Grits

Instructions

Heat Skillet to medium-high temperatures.
Add just enough Olive oil/Cooking oil to cover the bottom of skillet.
Add Cubed Turkey Sausage to Skillet and brown for about 3 minutes.
Add Shrimp to Skillet and toss with Turkey Sausage until Shrimp starts to turn pink.
Add Heavy Cream to Skillet and turn temperature to high.
Add 1 Tbsp of Seafood Spice per 1 cup of Heavy Cream and let boil for about 2 minutes.
Turn the Skillet off and let mixture sit for 5 minutes.
Pour mixture over bowl of grits and add a couple dashes of Seafood Spice.

Notes

Personally, I cook my grits with water, butter, salt, pepper, heavy cream and a 3 Cheese blend.

1 lb Fish
1 lb Shrimp
1 cup Seafood Breader
5 Dashes Seafood Spice

Instructions

Add Seafood Breader to freezer bag or container.
Preheat oil in pan or deep fryer to 350° F.
Place Seafood in bag/container with breader and shake until seafood is fully coated.
Slowly place seafood into hot oil and cook until done.
Remove seafood from oil and place seafood in a pan lined with paper towels.
Lightly dash Seafood Spice on both sides of the seafood.

Notes

Pat dry seafood before breading.
